Mekitsi (Fried Bread)


You need:
  • 16 oz. plain yogurt
  • 1 tsp. baking soda
  • 1 lb. flour
  • 1 pinch of salt
  • 1 cup of vegetable oil
  • Powdered Sugar, Honey, or Jam

Instructions:
Pour the baking soda into the plain yogurt. Wait a minute to start fizzing.
Sift the flour on a dry surface. Using the flour, salt, and the yogurt mixture knead soft dough. Do not use water. Without waiting for the dough to rise, make pitas and fry them in the medium heat in the hot oil. Sprinkle with powdered sugar, or arrange with honey, or jam of your choice.

My husband is Bulgarian and this is our favorite breakfast comfort food including my son. I was fortunate that my mother-in-law was here and we always request for mekitsi but now she's back in Bulgaria, I'm on a quest for the recipe. So far this is my second recipe, it was kind of difficult to work w/the dough coz it was too wet I added more flour until I was able to knead w/o sticking. It turned out well and I added the feta and egg filling...this will be my quick and easy mekitsi recipe...thank you for sharing!
