Peppers stuffed with beans

You need:
  • 1 cup of dried beans*
  • 6 red bell peppers
  • 4 oz. of shredded green cabbage
  • 4 oz. of pickled cabbage
  • 1 chopped onion
  • ½ cup of vegetable oil
  • 1 tomato
  • 1 tbsp. paprika
  • salt to taste
  • a few leaves of mint/джоджен

Instruction:
Bring the beans to a boil. Cook for 15 minutes. Add the mint and half of the onion. Simmer until they are cooked through.
Remove the stems and the seeds of the peppers. Cut them in half. Fry the rest of the chopped onion into the oil, slowly adding the tomato and paprika.
Strain the cooked beans. Add the cabbage and salt to taste. Stuff the peppers with the bean mixture.
Arrange the peppers in the baking pan. Bake them and 350F until browned. Serve with a spoonful of plain yogurt.

*The beans will be cooked faster and they will be easier to digest, if you soak them overnight in warm water. Rinse them well before you boil them.
