Appetizer “Melnik”

You need:
  • 2 bell peppers
  • 8 oz mushrooms
  • 1 medium onion
  • 4-5 garlic gloves
  • 4-5 small zucchini
  • 1 cup of vegetable oil
  • 1-2 oz of feta cheese
  • 5-6 olives
  • ½ bunch of parsley
  • salt to taste
  • vinegar
  • grape seed oil
  • 1 cucumber
  • 2 tomatoes

Peel and cut up the zucchini into circles. Deep fry them, or fry them in a skillet using the vegetable oil. When they turn golden brown, remove and drain them. In the same oil, fry the mushrooms, peppers, and the onion. Add the garlic to it at the very end. Arrange in a large plate and add fresh tomatoes, a cucumber, and the finely chopped parsley. Top it with feta cheese and olives. Pour the vinegar and the grape seed oil over the top.This serves 4.
