Chicken with Peppers

You need:
  • 6 chicken breasts
  • 1 Red bell pepper
  • 1 yellow bell pepper
  • 8 oz. of mushrooms
  • 1 medium onion
  • 4-5 large garlic cloves
  • 2 cups of rice
  • salt to taste
  • black pepper
  • oil for frying

Cut the chicken into small pieces. In a large skillet, fry the chicken for 4-5 minutes. Stir, occasionally. Add 2 cups of water and simmer for 15 minutes at medium heat, or until cooked through. The liquid should be completely evaporated, when it’s done. Wash and cut up the vegetables. Fry in the same skillet for about 4-5 minutes along with the chicken to get a golden color. Add additional oil if needed for frying. Serve and garnish with steamed or boiled rice. Sprinkle with black pepper. This serves 4.
