Poached Eggs (Po Panagurski)

You need:
  • 8 large eggs
  • 1 quart of water
  • 1 table spoon of paprika
  • ½ tablespoon of salt
  • 1 cup of cottage cheese

In a deep pot, bring 1 quart of water to a boil. Add the salt and paprika. You may add another favorite seasoning to it. Crack the eggs one by one into the pot. Cook for a few minutes until the egg whites are mostly solidified, but the yolk is still soft. The perfect poached egg has a runny yolk and hard white crust. No oil or fat is used in its preparation. Arrange the cottage cheese in 4 serving plates. Remove the eggs from the water and place them over the cheese. Sprinkle with Sharena Sol*. This serves 4.
