Green Salad with Grilled Chicken


You need:
  • 6 oz. spring mix lettuce
  • ½ European cucumber
  • 2 tomatoes
  • 2-3 grilled chicken breasts
  • 1/3 cup feta cheese
  • 2 tablespoons walnuts
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons red wine vinegar
  • 3 tablespoons grape seed oil
  • salt to taste


Instructions:
Peel and cut the cucumber. Chop the tomatoes into very small pieces. Add the green mix. You may use couple teaspoons of bruschetta instead of tomatoes. It will bring even more flavor. Add the rest of the ingredients and mix well. This serves 4. Fresh salads are fabulous for summer!
