Rice with Mushrooms and Black Olives

You need:
  • 1 cup of white Basmati Rice
  • 1 tablespoon of salt
  • ¾ cup of finely chopped tomatoes
  • 6 oz. black olives
  • 1 cup of Cremini mushrooms
  • ½ bunch of fresh basil
  • freshly ground black pepper
  • 3 tablespoons of olive oil
  • 3-4 garlic cloves (optional)

Cook the rice and set aside. In a skillet, fry the mushrooms in the olive oil. Combine and mix the cooked rice with the fried mushrooms, the black olives and the fresh tomatoes. Season and top with basil and black pepper. The use of garlic is only optional. This serves 4.
