Chicken Fricassee


You need:
  • 4-5 chicken or turkey breasts
  • pinch of salt
  • 2 cups of milk
  • 2 cups of chicken broth
  • ½ cup flour
  • 1 egg white
  • the lemon zest of 1 large lemon
  • 2 tablespoons of butter

Instructions:
Place the chicken breasts in a deep saucepan and boil for 30-40 minutes. Make sure to remove the foam when boiling the chicken. Save the chicken broth. Cut the boiled chicken or turkey into very small pieces. In a skillet, melt the butter and add ½ cup of flour. Stir it well. It will have a golden color. Add the milk and 4 cups of the chicken broth and cook it for 4-5 minutes on a medium heat. Add the salt, lemon zest, and the egg white to it. Stir very well. The lemon zest will infuse the dish with a lot of citrus flavor. Serve on a plate with pita bread. You can top it with some olives.
