Bean Salad (Vodenicharska)

    You need:
    • 2 cups of boiled white beans
    • ½  onion, finely chopped
    • 2 teaspoons red wine vinegar
    • 2 teaspoons fresh lemon juice
    • 3 roasted peppers, finely chopped
    • 1 cup chopped tomatoes
    • 1/3 cup, finely chopped parsley
    • black pepper and salt to taste
    • 3-4 tablespoons olive oil
    Boil the beans. Marinate them in vinegar for 10-15 minutes before you get the other ingredients ready for the salad. Cut the tomatoes and the roasted peppers into small pieces. Chop the ½ onion and the parsley, or use a food processor. Sprinkle with black pepper and salt. Drizzle with olive oil and lemon juice. Mix all the ingredients together. This serves 4.
