You need:
- 5-6 medium potatoes
- 1 cup mushrooms
- ½ onion
- 1 red bell pepper
- 1/3 bunch of fresh dill
- salt to taste
Instructions:
Wash, peel, and dice the potatoes in circles. In a large skillet, fry them along with the mushrooms for 6-7 minutes. Stir occasionally. Add the rest of the vegetables and cook for additional 7-8 minutes over low heat. When cooked, the potatoes should be tender, but firm. To check, stick a fork, or a small knife in. If it goes in easily, it’s done. Drain the potatoes from the frying oil. Garnish with fresh dill. This serves 4.
