Pork Tenderloin


You need:
  • 1 pound of pork tenderloin
  • 1 medium onion
  • 1 bunch of fresh parsley
  • 1 teaspoon of paprika
  • 2 tablespoons of red wine
  • salt to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tomato
  • 1 pound boiled potatoes
Instructions:
Wash and cut the pork into small pieces. In a large skillet, fry it for 4-5 minutes. Stir occasionally. Add the chopped onion and fry it for a minute. When you get the golden color, it is time to add the rest of the ingredients that will make the sauce: the diced tomato, the paprika and the red wine. It is better if the tomato is peeled. Simmer and add about 3 cups of water. Cook for about 30 minutes at medium heat or until cooked through. The liquid should be almost evaporated when it’s done. In the mean time, boil and peel the potatoes. Serve and garnish the pork with  the  boiled potatoes. Chop and top with fresh parsley the last minute. This serves 4.
