2 cups of cornmeal
8 cups of water
¼ cup of butter
¼ cup of feta cheese
salt to taste
Instructions:
Bring the water to boil. Add a little salt. Add the cornmeal. Do not stir. Make a hole in the middle with a wooden spoon. Simmer for 30-40 minutes. Cook stirring the polenta for another 10 minutes to break up any lumps. Melt the butter in another pot. Add the polenta and cover for another 10-15 minutes. Serve hot with the feta cheese on top.
